Romain Faivre pulled one back for Brest in the 68th minute, but Simon’s introduction sealed a comfortable win for Nantes.
The 25-year-old came on for Marcus Regis Coco in the 63rd minute, and he set up Kader Bamba, who scored Nantes third in the 11 minutes from time.
Following the win, Nantes moved up to 15th place on the Ligue 1 table with eight points from seven games.
Meanwhile, in Spain, Samuel Chukwueze was impressive as Villarreal saw off the stubborn challenge of Valencia following a 2-1 win.
The Yellow Submarines opened the scoring via a Paco Alcacer sixth-minute penalty after Mario Gaspar was fouled in the area following a brilliant ball from Chukwueze.
However, Valencia hit back through a brilliant Goncalo Guedes strike eight minutes before the break. But a 69th-minute strike from former Valencia captain Dani Parejo secured the three points for Unai Emery’s men.
The win lifts Villarreal to the top of La Liga table with 11 points from six games.
